WAFFLES!

Do you like waffles?

Of course you do!

Filled with gooey syrup? Or topped with strawberries and whipped cream? Or how about a mixture of butter, cinnamon and maple syrup for a truly amazing flavor?
Whatever you like on your waffles, it helps to start out with a good baking mix. And some of the popular store bought ones, while delicious, are filled with all kinds of unhealthy ingredients.

This recipe is a hit with my two picky 3 year olds and my 1 year old. It keeps my diabetic’s sugars stable, and I have found that even I can eat it in the mornings, despite my incredible sensitivity to carbs.

Here they are devouring the waffles. And then begging for more!

Best part? It is so simple to make up the mix. And if you keep it in the freezer, it can be used over and over and over again for super quick breakfasts that take no longer than toasting up some freezer waffles! What could be better?

Lets start with the basic mix.

And that’s it! Super simple, isn’t it? And it makes about 11 cups. That’s an awful lot of amazing mix to last you several days.

Now to turn it into waffles.

The nutrition information is going to vary depending on what ingredients you use. When I make it as written with all sugar free items the nutrition information is as follows:

*Make sure you are using a quality protein powder. I use Now Foods Whey Protein Isolate or Swanson’s Whey Protein Powder. There are some others on the market that are made by reputable companies as well. Another option is to substitute powdered milk for the protein powder. But keep in mind that this will increase the carb count and decrease the amount of protein in the final product.
